Once you are displaying progress on a map, you can change the colours assigned to each progress threshold.
Steps
Click the metric map colours button
...
A popup appears
...
Now select custom colours
Click edit colour ranges
Here you can add a new field by clicking on add another field button
You can also remove a field by pressing on delete icon
Now press save changes to apply metric colours
